The Author
Keith E. Lyons is a passionate enthusiast and loves all details of the specialty coffee world. He started in coffee as a barista in the late 90's, but then moved into the world of humanities and got licensed as a trauma therapist. He continued his passion for coffee privately, but one day a cup of coffee changed his life. He took a specialty coffee tasting course at Memli Coffee Labs with US Tasters Cup Champion Mehmet Sogan, and his passion was further ignited. With the help of private classes, online certification courses, and endless hours at home experimenting and exploring, he began to dive deep into water chemistry, began roasting to understand the process of coffee development, and then decided it was time to contribute more to the community and industry he loves.
"I wrote the book I wished had existed when I first fell in love with specialty coffee, comprehensive, honest, and written with genuine respect for the reader."

Specialty coffee is more than a category, it is a philosophy of quality, transparency, and craft that has fundamentally reshaped how the world thinks about one of its most consumed beverages. Understanding specialty coffee means understanding the entire supply chain, from the altitude of a highland farm to the precision of a barista's pour.
Specialty coffee is defined by the Specialty Coffee Association (SCA) as coffee that scores 80 points or above on a 100-point scale when evaluated by a trained Q-grader. This rigorous scoring system assesses fragrance, aroma, flavour, aftertaste, acidity, body, balance, uniformity, clean cup, and overall impression. Only a small percentage of the world's coffee achieves this designation, making specialty coffee a genuinely rarefied category. Beyond the score, specialty coffee is characterised by full traceability (often to a single farm or cooperative), transparent pricing that pays producers fairly, and a commitment to preserving the unique terroir-driven flavours that distinguish one region's coffee from another.
Every cup of coffee is the result of a complex extraction process in which hot water dissolves and carries compounds from the ground coffee into the liquid I drink. The key variables, grind size, water temperature, brew time, and the ratio of coffee to water, interact in precise ways to determine whether a cup is balanced, over-extracted (bitter and harsh), or under-extracted (sour and thin). Ideal extraction typically falls between 18-22% of the coffee's soluble material, producing a brew strength of 1.2-1.5% total dissolved solids for filter coffee. Understanding these parameters is the foundation of every great brewing method, from the simplicity of a V60 pour-over to the pressurised dynamics of espresso.
Just as wine expresses the character of its vineyard, specialty coffee reflects the terroir of its origin, the soil composition, rainfall patterns, altitude, and microclimates of the region where it was grown. Ethiopian coffees, often grown at altitudes above 1,800 metres in regions like Yirgacheffe, Sidama, and Guji, are celebrated for their floral jasmine notes, bergamot aromas, and bright citrus acidity. Colombian coffees from Huila or Nariño offer a different palette: stone fruits, caramel sweetness, and velvety body. Kenyan AA from the Central Province brings blackcurrant intensity and wine-like complexity. These distinctions are not marketing abstractions, they are the biochemical expression of altitude, varietal, and the hands of the farmer who cultivated them.
The third wave of coffee, a term credited to Trish Rothgeb in 2002, describes a movement that treats coffee as an artisanal product worthy of the same serious attention given to wine, craft beer, or fine food. Where the first wave brought coffee into everyday life via canned supermarket blends, and the second wave scaled café culture globally through chains like Starbucks, the third wave insists on quality, transparency, and craft at every step. Third-wave roasters work directly with farmers, often paying prices many multiples above the commodity market rate. Their roasting profiles are designed to highlight origin character rather than mask defects. Their baristas are trained in precision brewing and sensory analysis. The result is a cup that tells a complete story, of place, person, and process.
