Grind Size
Medium-fine (slightly coarser than espresso, finer than pour over). Too fine will clog the basket and cause excessive pressure.
Water Temp
The water starts cold and reaches boiling (100 C) during brewing. Pre-heating the water can reduce bitterness by shortening the heating time.
Brew Ratio
1:7 to 1:10 (coffee:water). The basket size determines the dose; do not overfill or underfill the water chamber.

History
The moka pot was invented by Luigi De Ponti and patented by Alfonso Bialetti in 1933 in Italy. Bialetti's company, Bialetti Industrie, made the moka pot an Italian household staple. The classic aluminum Moka Express design has remained largely unchanged since 1933. Over 330 million Bialetti moka pots have been sold worldwide.

Alfonso Bialetti patented the moka pot in 1933 in Crusinallo, Italy. The design was created by Luigi De Ponti. Alfonso's son Renato Bialetti popularized the moka pot after World War II, making it the icon of Italian coffee culture. The famous 'l'omino coi baffi' (the little man with a mustache) logo was introduced in 1953.
How It Works
The moka pot has three chambers: a bottom boiler for water, a middle funnel basket for ground coffee, and a top chamber for the brewed coffee. As the bottom chamber is heated, water boils and creates steam pressure, forcing hot water up through the coffee basket and into the top chamber. The process takes about 5-10 minutes.
Extraction Science
The moka pot uses steam pressure (1-2 bar) to force hot water upward through ground coffee. This is a pressure-assisted percolation method, but at much lower pressure than espresso (9 bar). The water is at boiling temperature, which is hotter than optimal for coffee extraction, contributing to a more bitter cup. The metal filter allows oils through, producing a rich, full-bodied brew similar to but less concentrated than espresso.
Flow Dynamics
Steam pressure in the bottom chamber forces water upward through the coffee basket. The coffee then passes through a metal filter in the top chamber's funnel. Flow is continuous until all water has been pushed through or the pot is removed from heat.
Extraction Yield and Strength
Typical Extraction Yield: 15-20%. The moka pot typically extracts slightly less than espresso or pour over due to lower pressure and shorter contact time, but the high temperature compensates partially.
Typical Strength (TDS): 4-8% TDS. Moka pot coffee is concentrated, between filter coffee and espresso in strength.

- •Using boiling water to start (pre-heating the water can actually help reduce bitterness by shortening the heating phase)
- •Tamping the coffee (moka pots do not require tamping; level the grounds instead)
- •Not cleaning the pot regularly, causing rancid oil buildup
- •Using high heat, which burns the coffee; use low-medium heat

Common Myths
- •Moka pot makes espresso. It does not. Moka pot produces coffee at 1-2 bar pressure, far below espresso's 9 bar. The result is strong, espresso-like coffee but not true espresso.
- •You should tamp the coffee like espresso. Do not tamp moka pot coffee. Tamping creates excessive pressure that can cause the safety valve to fail. Level the grounds instead.
- •Aluminum moka pots are unsafe. Aluminum moka pots are safe when used and maintained properly. The coffee does not remain in contact with aluminum long enough for significant leaching. However, stainless steel versions are available for those who prefer them.
Cleaning
Disassemble all parts and rinse with warm water after each use. Do not use soap on aluminum moka pots, as it can damage the seasoned surface. Dry thoroughly to prevent corrosion. Periodically clean the safety valve to ensure it functions. For stainless steel, soap can be used. Descale periodically with water and vinegar or citric acid.
Maintenance
Check the rubber gasket (O-ring) regularly and replace when it shows wear or leaks. Check the safety valve on the bottom chamber: it should move freely. Replace the filter plate if it becomes clogged or damaged. For aluminum pots, avoid dishwasher use. Store disassembled to prevent gasket compression.
